खारै सथा (Kharwi Sotha)

खारै सथा (kharwi sotha) is an organic alkali made from  the rhizome and mature pseudostem of banana. The best suitable banana for this preparation is खारै सथा is a seeded banana plant.The rhizome and pseudostem of the banana is cut into small slices so that it takes less heat to dry, it is basically sundried. After choosing a clean spot the fully dried slices of banana rhizomes and pseudostem are burnt into ashes. The ashes are collected and stored in a place wrapped with dry banana leaves, the dried banana leaf maintains the humidity of the stored vessels. It is also stored by making small cake shapes which are dried in the sun. In the preparation to get the खारै (alkali) the खारै सथा is kept in a clean vessel or sometimes in the coconut shell, the filter paper/sheet mainly used in the process is made from a coconut leaf sheath. Clean water is poured in the खारै सथा and liquid is extracted from it which is called खारै. The main purpose of the खारै सथा is to produce खारै.The quality of the खारै concentration can be prepared from खारै सथा depends on the amount of water poured on it.
